These are the best baked potatoes ever. With a slightly different preparation, they wind up with extra crispy skins and extra fluffy, soft insides. I'll never go back to the "campfire" potatoes in foil again.

Pre-heat the oven to 400°F.

potatoes, large russet
Wash the potatoes, and then cut a quarter inch cross into the tops. Place in an oven at 400°F for 10min short of two hours.

Remove the potatoes from the oven and deepen the slits by another quarter of an inch. Return to the oven for 10 more minutes.

Remove from the oven and allow to cool slightly. Pinch to open up the potato and serve with a generous slab of butter and dusted with salt and pepper.
