So often, they only way you encounter sweet potatoes is puréed with ton of sugar (maple syrup, marshmallow, etc.). This is a delicious alternative which, while still sweet, allows the natural flavor of the sweet potatoes to shine.

Pre-heat the oven to 350°F.

Mix the olive oil, honey, rosemary, salt, and black pepper in a small mixing bowl.

sweet potatoes / yams (peeled, chopped)
Add the sweet potatoes to the mixing bowl, and mix until coated with the sauce. Lay out in a single layer on a cooking sheet lined with foil. Cook in the oven until tender (about 45 minutes).
